A brief pause in Hawaii, sponsored by Cindy's Kitchen :)- Hawaiian Haystacks


So, before we left for Hawaii we had a Luau at my house which I served Hawaiian Haystacks. I love these, they're soo good. It might be labeled Hawaiian, but I think its Mormon food ;), LOL. This I made in the crockpot, along with the pineapple upside down cake.
Hawaiian Haystacks
This will feed 4 or maybe more, depending how hungry you are..I doubled my batch.
Sauce:
1 pkg boneless chicken breasts, diced seasoned and cooked (I like to use Paula Dean's house blend, but i think its season salt, pepper and garlic)
1 can cream of chicken soup
1 reg size can of crushed pineapple
1/2 cup or more to taste of Miracle Whip
In Crockpot, combine ingredients together and mix. You can put it on low for abt 4 hrs, it should be done. Cook your favorite rice, I would do about for 4-6 servings. Next are the veggies its a free for all.
Toppings:
Diced tomatoes, green onions, celery, corn, peas, olives, shredded coconut, chowmein noodles cheese.
When you assemble, place rice over plate. Top with sauce, then veggies, chowmein, coconut and cheese, you can add extra pineapple if you want. Yumm!
